
Every once and a while us Dashbordians get together at lunch to break bread and share our favourite recipes. It’s quite sweet, and always really yummy. It’s amazing how many incredible chefs we have here. Every course was covered; orzo salad, spring rolls, pulled pork sandwiches, perogie pie, chocolate chip cookies and flan to name a few. It was an hour devoted to catching up and stuffing our faces. I knew I should have worn elastic waist pants.
Enjoy Danica’s Chocolate Chip Cookies:
Ingredients
• 4 1/2 cups all-purpose flour
• 2 teaspoons baking soda
• 2 cups butter, softened
• 1 1/2 cups packed brown sugar
• 1/2 cup white sugar
• 2 packages instant vanilla pudding mix
• 4 eggs
• 2 teaspoons vanilla extract
• 4 cups semisweet chocolate chips
1. In a large bowl, sift together flour and baking soda and set aside.
2. In a separate bowl, mix the butter, brown sugar, and white sugar together.
3. Beat in the instant pudding mix, then stir in eggs and vanilla until blended.
4. When the mix is somewhat consistent, stir in the flour mixture.
5. Lastly, add in the chocolate chips. Put the cookies on the sheet in rounded spoonfuls.
6. Bake at 350 degrees for 12-15 minutes. Varies depending on size of cookies, I like to make them big :) Bake until the edges turn golden brown.
